Chipotle Chicken

Ingredients

4-5 boneless, skinless chicken thighs
1 4 oz can of chipotle peppers in adobo sauce
1/8 cup olive oil
juice from 1 juicy lime
4-5 cloves of garlic
1/4 cup washed fresh cilantro;
1/2 tsp sea salt
1/2 tsp black pepper
1/2 tsp cumin
1/2 tsp oregano

Steps

  1. Combine all ingredients together in a blender and blend. Don't worry about being too precise about the seasonings. A little more or a little less is fine.
  2. Pour over chicken thighs in a bowl or a ziploc bag and let marinate for at least 30 minutes, but up to 24 hours
  3. Take your chicken out of the marinade and cook it however you'd like. I like to grill it at high heat on my traeger, but you can also bake it, pan fry it, or air fry it
