Berry stuffed croissant french toast

Ingredients

Cream Cheese Filling

8 oz cream cheese
1/4 cup sugar
1/2 cup diced strawberries
1/2 cup blueberries
1/2 cup raspberries
7-8 large croissants

Custard

6 large eggs
1/2 cup heavy cream
1/2 cup milk
1/4 cup sugar
1 tablespoon vanilla extract
1/2 teaspoon salt

Steps

  1. In a large mixing bowl, combine your custard ingredients and beat until combined. Set aside.
  2. In a second bowl, combine your cream cheese and sugar and beat together until fully incorporated. Then fold in your fruit gently.
  3. Cut a slit in the croissants and stuff them with the cream cheese and fruit mixture.
  4. Place the stuffed croissants in a baking dish and pour the custard over the top. Let sit for at least 30 minutes, but preferably overnight.
  5. Preheat your oven to 350 and bake for 45 minutes or until the custard is set.
  6. If your croissants start to look too crispy, cover with foil so the custard can continue cooking
